Chicken & Vegetable Fried Rice: Use veggies you have on hand with rice, eggs, and seasonings to put an easy, fresh spin on your rotisserie chicken.

Ingredients:
- 2 cups Traditional Rotisserie Chicken, diced
- 2 tablespoons oil
- ½ cup broccoli
- 1/3 cup diced zucchini
- ¼ cup diced onion
- ¼ cup diced carrot
- ¼ cup diced tomato
- 1 tablespoon sugar
- 1 cup white rice, day old
- 2 tablespoons unsalted butter
- 1 egg
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons sweetened rice vinegar
Instructions:
- Heat a large skillet with oil over high heat until hot. The oil should almost smoke.
- While this is heating, toss the chicken and vegetables in a mixing bowl with sugar and coat well.
- Stir-fry the mixture in the skillet, cooking for 2-3 minutes, stirring continuously.
- Add in the rice and butter, continuing to stir until butter is melted.
- Push all the contents in the skillet to one side. Whisk the egg in the skillet with a fork until almost cooked throughout and start folding into the remaining food.
- Spread the food back out and toast for 1 minute. Season with salt and pepper and finish with soy and vinegar.
