Garlic Cheddar Drop Biscuit Chicken & Dumplings: These delicious drop biscuits are packed with flavor and make for an easy, new spin on classic chicken & dumplings in a creamy blend of chicken broth and veggies.

Ingredients:

  • 3 cups diced Traditional Rotisserie Chicken
  • ½ cup diced white onion
  • ¼ cup diced celery
  • ¼ cup diced carrot
  • 3 cups unsalted chicken broth
  • ½ cup heavy whipping cream
  • 2 tablespoons vegetable oil
  • 2 tablespoons all-purpose flour

Dumplings:

  • 1 cup all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ cup shredded cheddar cheese
  • ½ cup milk

Instructions:

  1. Start by making the dumplings. Place all the ingredients minus the milk in a blender. Puree until fine. Remove from the blender and place into a mixing bowl. Stir in milk until well incorporated. Roll the dough into bite-size balls and refrigerate.
  2. Heat oil in a sauce pot over medium heat. Sweat the vegetables for 1 minute and stir in flour until coated well. Stir in the cream and thickening will be fast, stir in the broth until smooth.
  3. Reduce heat to medium-low. Cook the dumplings in small batches. Cook for 2-3 minutes in the liquid, remove and repeat the dumplings in small batches until finished. Check the dumplings are cooked throughout, simply pierce the middle of the dumplings with a toothpick. If the toothpick is clear of dough the dumplings are done. Do not overcook or the dumplings will begin to dissipate into the liquid.
  4. Add the chicken to the liquid and bring to a boil for 5 minutes. Serve with the dumplings.
